Autumn has arrived, and pumpkins are in high demand because autumn is a great season for eating pumpkins. The autumn climate is dry, so increasing food rich in vitamin A and vitamin E can enhance the body's immunity and greatly benefit the improvement of autumn dryness symptoms. Pumpkins contain abundant vitamin E. The beta-carotene in pumpkins can be absorbed by the human body and converted into vitamin A. Vitamin A and protein combine to form rhodopsin, which plays an important role in vision. A lack of carotene can lead to night blindness or even total blindness, which is more obvious in children. Chen Xiuyuan, a famous physician in the Qing Dynasty, said: "Pumpkin is a wonderful product for blood replenishment." Regularly eating pumpkin can keep the bowels open, make the skin beautiful, and especially has a beautifying effect on women.
There are many ways to eat pumpkin, such as cooking porridge, steaming, simmering, and cooking rice. Using 200 grams of pumpkin, 150 grams of black rice, and 60 grams of red dates, you can make pumpkin black rice porridge. Wash the pumpkin, remove the stem, cut it open, remove the seeds and cut into slices. Wash the black rice and red dates and put them together in a pot, add 1000 ml of water, boil over high heat first, then reduce the heat and simmer until the rice is cooked. You can also steam 150 grams of pumpkin, then add 40 grams of sugar, 250 ml of milk, and 1 egg in order to make pumpkin paste suitable for children.
Don't eat too much pumpkin. When you eat too much pumpkin and ingest excessive beta-carotene, the beta-carotene will accumulate in the stratum corneum of the epidermis. Therefore, places like the nose, philtrum, forehead, palms, soles, around the eyes, beside the nails, around the joints, or areas with more skin folds will turn a lemon-yellow color, looking like jaundice. This symptom is called carotenemia. However, carotenemia is formed due to increased beta-carotene, and this yellow color will not be present in the sclera. Therefore, when eating pumpkin, do not exceed the amount of one main meal per day.
